Simple Summer Spaghetti



Spaghetti in the summer?? if you love pasta, this simple spaghetti recipe will have you enjoying this pasta dish all year round! If you're pressed for time, you can make it faster by adding canned sauce instead of making your own...but the pasta has to cook anyway - why not spice it up??


RECIPE


Ingredients:*

  • 1 c. whole wheat pasta (cooked)

  • 1 c. cherry tomatoes (halved)

  • 1 tbsp. olive oil

  • 2 garlic cloves

  • 1/2 oz. basil, thinly sliced

  • 1/2 tsp. sea salt

  • 2 oz. ground turkey (93% lean)

  • 2 tbsp parmesan cheese

  • 1 tbsp. Balsamic glaze (if desired)

Instructions:

  1. Fill pot with water (enough to cover pasta noodles when added) and a pinch of salt, bring to a boil.

  2. Add pasta noodles. Cook according to package directions.

  3. Cook ground turkey over medium heat until brown. Add Italian seasoning as desired.

  4. Heat olive oil in a medium sauce pan over the stovetop, add crushed garlic and let cook for 30 seconds to 1 minute.

  5. Add cherry tomatoes and stir. Cook for about 5 minutes (until begin to burst).

  6. Remove pan from heat, add basil and sea salt.

  7. Add sauce mixture to ground turkey, if desired.

  8. When pasta is finished cooking, drain and return to pot. Add sauce (if pasta is too dry, you can add in some of the drained pasta water if desired) and ground turkey; top with parmesan cheese. Drizzle with balsamic glaze, if desired.

  9. Enjoy!
