Mediterranean Chicken Salad

This easy salad is great to prepare at the beginning of the week and enjoy as a quick, go-to meal during busy days. Keep the dressing on the side and toss with fresh avocado when you're ready to dive in!



  • 1/2 tbsp. olive oil

  • 2 cloves garlic

  • 4 oz grilled chicken breast

  • 2 c. chopped romaine lettuce

  • 1 c. Persian cucumbers, thinly sliced

  • 1/2 c. cherry tomatoes, halved

  • 1/4 avocado

  • 1 oz. feta cheese

  • 5 kalamata olives, halves

  • 1/2 tbsp. olive oil

  • 1 garlic glove, minced

  • 2 tsp. red wine vinegar

  • Lemon juice and parsley, to taste


  1. Heat 1/2 tbsp. olive oil and minced garlic in a stovetop pan.

  2. Slice chicken. Add to oil and garlic, saute.

  3. Once cooked to 165 degrees F, remove from pan and set aside to cool.

  4. Mix olive oil, red wine vinegar, minced garlic, lemon juice, parsley, and any additional seasonings in bowl. If dressing more than one salad, feel free to multiply ingredients to make enough dressing for multiple servings. Set aside

  5. Add veggies, cheese, avocado, and chicken in a bowl. Toss with dressing.

  6. Enjoy!
