Zucchini boats are a great meal prep option for two reasons: 1) more than likely, you're going to cook your whole package of ground turkey at once anyways; 2) it only takes a few extra minutes to scoop out an additional few zucchini to fill with ground turkey! These also keep great in the fridge and reheat well. Remember the recipe below is for a single serving, so if you're going to make more than one serving at a time increase the ingredients accordingly.
RECIPE:
Ingredients:*
2 zucchini
1 oz 93% lean ground turkey
1/2 onion
1/2 c. marinara sauce
1/2 oz. shredded cheese
1/4 c. corn
1/4 c. black beans
Instructions:
Preheat oven to 350 degrees F.
Wash zucchini. Trim ends and cut in half lengthwise, scoop out inside and set aside.
Spray medium sized skillet with non-fat cooking spray.
Heat skillet on medium heat, add chopped onion, zucchini pulp, and ground turkey. Cook until turkey is mostly brown.
Add marinara sauce (if cooking a package of ground turkey at once, you can add 1 can of marinara sauce). Continue heating until marinara sauce bubbles and turkey is fully cooked. Add low-sodium seasonings if desired.
Remove pan from heat.
Place zucchini boats in baking dish or on a cookie sheet covered in foil (for easy cleanup). Evenly distribute mixture between zucchini boats and top with cheese.
Bake for 25 - 30 minutes or until zucchini is tender.
