This breakfast is loaded with protein and veggies - add one or two slices of toast depending on your calorie needs, and you've got a balanced breakfast! Don't have time to make breakfast in the mornings? Multiply this recipe by 5, combine all ingredients into a baking dish, and bake at 325 degrees for 30 minutes. Now you've made breakfast for the whole week and you can warm up your eggs while your toast is cooking! Easy-peasy ;)
6 tbsp egg whites
1/2 tbsp olive oil
1 oz shredded cheese
1 c. spinach
1/2 c. bell peppers
2 slices whole wheat bread
2 tbsp sugar-free jam
Heat olive oil in skillet over medium heat. Add spinach and sauté.
When spinach is about halfway cooked, add bell peppers and finish sautéing.
Add egg whites to pan, scramble.
Top egg scramble with cheese, and enjoy!
